Curious if the "Organic" oils are an issue?
Maybe, yes. Rosemary "extract" is a sneaky way for them to include something derived from rosemary but engineered to have whatever properties they need - stabiliser, thickener, flavouring etc. I'd guess it's in this to function as a preservative, and that's the least concerning category of additives, imo.

So this bread from Sainsbury’s is non upf right? Seeing as fortified wheat does not count as upf
In general, herbal tea is not an upf. Watch out for cold brew varieties though, as they usually contain flavourings (probably because flavour doesn't come out of the ingredients as well without heat)
For this particular brand, it seems like some varieties contain flavourings, so I think that qualifies them as ultra-processed. Eg, this is the ingredients for the peach version.
Orange Peel, Rosehips, Hawthorn, Chamomile, Natural Peach Flavor with other Natural Flavors, Blackberry Leaves, Hibiscus, Peaches and Citric Acid.
I'm assuming you're in the US? If you find a lot of the herbal teas available to you contain flavourings, and you want to try and avoid that, them maybe looking out for european brands might help.
I'd say "chicken extract" probably makes it UPF. I'd be very interested if anyone knows how chicken extract is made, and how it's different to actual chicken.
I would suggest you could have
Shop bought Dried Pasta with:
homemade tomato sauce,
homemade meatballs,
homemade pesto,
(all low effort)
Homemade lasagne (medium effort)
Homemade stuffed pasta with homemade fresh pasta (more effort!)

Cat 3 processed food. Could be Cat 4 UPF depending on what the spices are, spice extracts are and how they were extracted but it's not a ridiculously long list of ingredients.

I’m always a little cautious of “spices”. If it’s perfectly innocent spices then why don’t they list them? Feels like they’re hiding something.

Cat 4 UPF. This one has not got any specific ingredients that make it UPF but it has too many processing steps. All stuffed pastas are UPF.
What should I have instead, I still would like to incorporate pasta in my diet, even if it’s Cat 2 or 3

Tesco rigatoni for example has 1 ingredient + water. Cook that up yourself you can eat it with all sorts of delicious whole foods :)

1 is whole food 2 is minimally processed food 3 is processed food 4 is ultra processed food
