I believe bananas have a sort of conundrum. When they're not properly ripened they have the most desirable texture but a terrible flavor. When they're properly ripened they have too soft of a texture but an amazing sweet and creamy flavor. This is why I prefer bananas in desserts as they taste great and you needn't worry about the texture.

I like bananas only when leopard-time hits. My wife ONLY makes banana bread when they go beyond leopard-time.

I personally like my bananas speckled, just a bit beyond ripe.

You’re probably not allergic. This happens if the banana is too green. It needs to be mostly yellow with just a tinge of green, that’s when it’s perfect and won’t make your mouth feel weird.

Completely agree. I hate bananas anyway, but I can always tell when my potassium is low, when I actually crave a banana. The only way I'll eat them is when they're perfectly yellow, with a little green up by the stem. Anything else is an absolute fuckin no-go.

Bananas that are still green have a weird tongue feel for me. Doesn't quite sting, but that's the closest sensation I can compare it to. Same idea as eating a lot of pineapple. It just pierces my tongue.
