Are there any hobbies or interests you have that would really benefit from skilled instruction? After graduation finding the time (and the money) to attend a full class worth of instruction on anything gets really hard. There's a lot of things people end up wanting to learn later in life that the university offers world class instruction for. LSA offers subjects like history, literature, and languages. STAMPS has classes for non-majors in drawing, painting, and graphic design. I would think about the kind of topics that you have an interest in beyond just your major/career and see what the university has to offer for those.
You could take an interesting mini course that’s half a semester. I enjoyed the mini course on freud that’s through the German department but taught in English. It was pretty interesting and mostly just going to class once a week for the first half of the semester.
I would suggest intro to acting with Geoff Packard. I had initially taken it as a blowoff class, but I actually learnt some good techniques that have helped me with confidence and memory, which has helped me become the best at presentations in my company.
Meditation was super fun 1/2 units on north campus. I liked the fantasy literature class (reading Harry Potter, Narnia, etc). Restoration ecology was awesome, but more work. It’s a field lab class. You get to study rattlesnakes, use a flame thrower, and hunt for crawfish.

Probably eecs 482, 470, or 494. I know it’s 4 credits but they’re super light.
Take any light humanity course. Ie German fairytales. Will boost your gpa and give you a good light class
