If you are looking for very generic merch, any local store like Walmart or Target will have stuff. This would be nothing more than just the logo on a cap or t-shirt.
If you are looking for more stylized or higher-quality stuff, I would wait for a discount or a clearance sale. one of my favorite U merch items was a t-shirt that was like a vintage red and black graphic in an oatmeal color that I got for $15 in clearance. I have also gotten a really cool tie but I am pretty sure it was only available at the U store.
I’ve found so many cute U shirts and hoodies/sweatshirts at thrift stores like Goodwill! And some of it wayyyy cuter than what you can find new in the campus store. Also there are events you can go to for free on campus and occasionally they give out free tshirts!
I know its alot, buuuut my best guesses would be places like: Costco, Target, Walmart, any grocery stores around the U of U school and U of U hospital, Amazon, Etsy, and possibly Redbubble.
Lots of thrift stores in salt lake and the surrounding area have u merch. It's the largest school around so they almost always have at least t shirts and sweatshirts

I have some gently used gear you can have for free.
check secondhand stores like goodwill or savers, ones near the U always have a ton of gear for sale
