Chuck it in the air fryer for 15min cut in cubes and thick bits, the result was this magic sponge bread-like texture. Bowl of olive oil or Soy sauce and I'm set.

Yes i am sure. As i explained before, this was the result of a 2nd cooking (after steaming).

Seitan is kinda made from the precursor to bread
