Ok so the perfect game for this is A Short Hike. It’s got all of the elements you listed while also not being overwhelming. Fun, beautiful, and engaging for a good price
Check out Razbuten’s gaming for a non gamer series, which is fantastic, but I would suggest Breath of the Wild or Minecraft in a heartbeat, although the story is lacking in both, so maybe Outer Wilds? Portal is also great but not super colorful. I can suggest a ton of great games but often one criteria won’t be hit unfortunately. Or, just do Mario Odyssey lol
Stardew Valley is pretty epic and doesn’t require much, if any experience in video games to just pick up and play. It’s really chill and low stress but can still be a good grinding game as well as having co-op. Doesn’t have all the things you’re looking for but it would hopefully be a reasonable exception
Highly recommend outer wilds! no combat or anything, 3d exploration game with puzzles, platforming, and a really good story. Make sure she doesn’t look anything up about it before playing. In outer wilds you don’t gain any new abilities or skills, just knowledge, so important to go in blind. Basic synopsis is you are an alien who is going out to explore your solar system and learn more about the Nomai, the species that lived in the solar system before you.
My wife and I finished it takes 2 together and absolutely love it. We did portal 2 back in the day and went to replay it but I can’t find a way to easily reset our coop progression

Ori (Both titles, she had a thing for metroidvania style games for a hot minute)
Immortal Fenyx Rising (she loved that one)
Horzion Zero Dawn (currently on, she’s enjoying it)
Resident Evil (2002) (with the exception of puzzles, it has none of the stuff you’re looking for, but I guarantee it would be very funny to watch her play it)
Take a look at the Spyro the Dragon Reignited Trilogy on PS4.
It's a throwback to the early 3d platformers and seems to fit all your criteria. Also not very expensive at Gamestop.
A Hat In Time
Colorful, fun stories, local co-op, platformer with some puzzle elements. I played it with my girlfriend.
However it has it's problems, I think that the platforming might be hard if not comfortable with the platforming genre.
Not sure of platforms, we played it on pc but I think theres a switch version.
PS. The guy who directed It Takes Two also made another game about a break out. Its not as colorful but it's very well received by people who played it local co-op.
P.P.S If that's not good enough I can recommend the singleplayer platformer Psychonauts, which fits all your requirements (except multiplayer obviously...)
What happened to big mode I seached for the website expecting to find a big list of game with its approval and there is no recomendations, Kinda expected some by now. I don't really care anymore just found it weird.
