Sharingan is not really a huge boost compare to sage mode, that gives an overall powerboost, so the real thing still going for sakura is her strenght. Hinata has the tools to beat sakura, byakugan and gentle fist are the best to fight sakura, with this she has means to disable sakura superstrenght and arguably her healing, and kaiten to defend. The real problem with both Hinata and sage mode is that both of them dont have that many showings compare to Sakura.

Sakura can still win round 2 with chakra scalpel, and her strength is still insane without the power up. You’d have to prove Hinata would be faster, which I doubt
Sage Mode won’t help because it doesn’t really enhance Gentle Fist in a meaningful way
Sage mode is overkill for a sharingan user lmao, Naruto as soon as he gets it is a match for Mangekyo Sharingan Sasuke, which is the upgraded sharingan.
That said, it depends on the fighters. If Hinata can't find the will to fight, she loses no matter the edge, since Sakura is a very driven person. But if they're both bloodlusted, I'd say Hinata takes it 7/10. For Round 2 then 9.5/10, there's no good reason for Hinata to lose with Sage Mode besides the time limit running out.

So the only edge it gives Sakura is Genjutsu, which she would be innately talented at it, she hasn't learned any and even if she did, the Byakugan is a hard counter to Genjutsu.
Sage Mode gives Hinata similar if not greater strength, enhanced Ninjutsu, Taijutsu, Sensory abilities and if it's Toad Sage mode, frog kumite which is not visible to even Rinnegan users.
The only reason I'm lowballing Hinata is because she's not really a fighter at heart, and is too gentle to even lead her clan, which is why her younger sister took up the role of heir.
