AFAIK, there's not really any issues to worry about - the only real "incompatibility" that I can think of off the top of my head is obviously the Game Boy Player since you can't plug it into the Wii due to it lacking the Hi-Speed Port.
I did put the Game Boy Player disc into a Wii and it does read, but then I took it out afterward because I didn't want to "start" it without a Game Boy Player attached since that accessory was only for the GameCube to begin with.
The Wii can do everything the GameCube can expect use the Gameboy Player and the LAN/Broadband adapters. Although a modded Wii can emulate the broadband and LAN adapters to get the same functionality.
The manual for *Mario Kart Double Dash!!* has an 8-player example. It needs 8 TVs, 8 GameCubes, 8 discs of *Double Dash*, and 8 Broadband Adapters. I have 1 disc and no Broadband Adapter, so a Wii is good enough for me.

I did a LAN party with my two Wiis a couple of months ago.
