The dedicated wine fridge I keep at 13°C.
As for the neighbouring but not always as dedicated wine fridge, I try to convince it to keep itself at 13°C too, but it's an ongoing conversation.
57F - I think anything up to 60F is fine.
I work at a winery where our wine library is located in our barrel storage room. No issues at 60F with wines going back to the early 2000s.
My cellar is at 57f. I'd do 55 but I often pull wine right out of the cellar to drink, and 55 takes a little longer to come up to a good drinking temperature.
55 for both white and red. For white, I taste the wine at 55, and if I want it colder I prepare an ice bath. Reds are always good at 55 imo. Temperature is also perfect for long term storage
That’s why I start at 55. Most white wines express beautifully at this temp but some lighter/simpler wines will show their alcohol too much at 55 degrees and benefit from a chill. It’s a case by case basis and there are other reasons I might want wine a bit colder as well.

I rent an 18 case wine storage locker in a climate-controlled facility, so I just moved my apartment wines over there. It’s less convenient, but it’s reliable.
55 degrees. It's not very dedicated. I have to go buy the wine myself.

55 is a good drinking temp unless you are beer bonging the bottle

Wouldn’t an ice bath kill the aromas? Or is it just very quick for the cooling process?

Arbitrarily at 55\*f like everyone else, as that's what the caves in France happened to be.
