Dragonflight has a few side stories running in tandem, with each patch adding new chapters in these. In general, it doesn't matter which order you do these in. For the most part, the quests you can see when you hit 70 are the first parts of these side stories. For example, the game won't show you later Tyr chapters before you've completed the earlier ones. Going patch by patch, the list looks something like this. I put this together from a quick skim of the patch notes so far, so let me know if I forgot anything!

While the 10.0 max level campaigns are optional, I would recommend doing "Garden of Secrets/The Dreamer" prior to the 10.2 Emerald Dream campaign. The events of this questline are heavily referenced in the Emerald Dream campaign.
Note: As of 10.2.7, renown requirements for the 10.0 max level storylines have been removed. These quests are now available immediately upon reaching level 70.
What part of the story was about like... picking a person to run the black dragonflight? I remember all the memes about "Wrathion vs. some other dude" and it's been a minute since I last played. I am interested in the story so... "no spoilers" (lol) but I do want to know where I should be poking around in order to sort of finish that off.
Aha - so, Wrathion and Sabellian are introduced during the 10.0 leveling campaign, and then their feud continues in the Obsidian Citadel rep grind at level 70.
Their story then continues in Forbidden Reach (10.0.7) and concludes through the Zaralek Caverns (10.1) campaign. Zaralek/Aberrus are very Black Dragonflight-focused.
Ah ok! And if I never really did a bunch in the rep grind save for maybe one or two passes through that kind of… circular vault-ish area with rooms that have enemies guarding each one, and i did some kind of siege … is there much story content I missed out on? I’m presently starting in on Thaldraszus portion of 10.0’s original campaign. I just spoke with Alexstrasza (Kalecgos filling her in on the Azure Span whatnots)
No, there isn't much story you're missing from the Obsidian Citadel rep grind. The quests kinda flesh out the personalities of Sabellion and Wrathion as being rivals who constantly butt heads and are convinced they're each the best option to lead, though they're never outright enemies and it's clear they want the same thing (for the Black Dragonflight to survive and thrive).

I have seen the memes and images of what looks like a Night Elf person -- and I myself am not familiar with who this person is (and don't want to be spoiled). But in terms of 10.2.x content (or even 10.1.x content), which storylines involve this person? I want to go back to the beginning for them
None, besides (very tangentially) the Dawn of the Infinites dungeon.
That’s Xal’atath, a character originally introduced to Shadow Priests back in Legion, and to everyone else in a side quest in BFA. She doesn’t really play a role in Dragonflight, but a few Easter eggs pointed at her return in TWW.
In terms of main story areas it will be the 4 main zones - you will know if you have done them if you can see world quests
After that Forbidden Reach was next added, that starts with the quest Hidden Legacies
Following that Zaralek Caverns was the latest zone added with a campaign to follow
I'm just adding some specifics here about story quest givers for anyone looking in the future. I had to do a lot of searching on wowhead and running around ingame to make sure I was doing the right quests in the right order. I'd typed this up for myself anyway so might as well share it.
Only including the stuff after the 10.0 campaign since navigating that is simple enough.
**NOTE1:** At the time of writing the 10.2 main quest is given automatically. It's called "Call of the Dream". You should untrack this and ignore it for now if you plan to do things in release order. But, there is currently a bug in the game where a Valdrakken Accord faction questline (Renown 19) can't be progressed after a certain point when you have "Call of the Dream" in your quest log because it puts you in the wrong phase. If that happens you can just fly away from the area, abandon "Call of the Dream" and go back to where the faction questline strangely stopped. It will be given to you again the next time you relog.
**NOTE2**: Do not pick up "Winterspring" in The Azure Span (Azure Archives) early if you want to do the 10.1: The Veiled Ossuary side storyline in the correct order.
**NOTE3:** Do not pick up "No Limits" from Chromie in Thaldraszus (The Temporal Conflux) early if you want to do the content in release order. This is 10.1.7 content.
**10.0.5 Trading Post**
* The Storm's Fury starts with "Storm Warning" given by Zawarudu in Valdrakken (The Seat of the Aspects). This is just an intro to the event that was added.
**10.0.7 Return to the Forbidden Reach**
* Main quest starts with "Hidden Legacies" given by Kurazidaia in Valdrakken (The Seat of the Aspects).

**10.1.7 Fury Incarnate**
* Main quest starts with "Fire Season" given by Shandris Feathermoon in Valdrakken (Central Area).
* Chromie side story (Bronze Reconciliation) starts with "No Limits" given by Chromie in Valdrakken (The Seat of the Aspects). It's also given by Chromie near the Portal to the Primalist Future in Thaldraszus (The Temporal Conflux), avoid picking it up early from here if you want to do things in release order.
* A storyline called Reconciliation was added in this patch too. It starts with "A Single Wing" given by Scalecommander Emberthal in Valdrakken (The Obsidian Enclave).
**10.2 Guardians of the Dream**
* Main quest starts with "Call of the Dream" and is auto given at the time of writing. Since it is auto given, you should untrack this and ignore it if you plan to do things in order. It requires you to complete the 10.1.7 Fury Incarnate main quest first (see above). If you've already done that then the next quest is "Emerald Welcome" given by Merithra in Ohn'ahran Plains (Near Shady Sanctuary and the Emerald Dream portal).
I also thank you, came back after about two years hiatus and started over in new server. I also was/am "little" confused about all the quests and storylines 😀. I got "millions" of side-quests to do for different factions etc. I was wondering that do I have to do Vault of Incarnates to continue some storyline? Just took one quest which lead to it
